Easy Blueberry Pancakes

I love making these SUPER fluffy and delicious blueberry pancakes when blueberries are in season!
This is a basic and easy recipe, which is how any type of breakfast recipe should be! Because who can deal with anything complicated in the morning?!😄

Ingredients: (yields about 5-6 small pancakes)

  • 3/4 cup flour (you can use all-purpose or whole wheat flour)
  • 2 tsp baking powder 
  • 1/2 tsp salt
  • 1 tsp sugar 
  • 1 large egg
  • 1 tbs melted butter (If you use whole wheat flour, add 2 tbsp of butter)
  • 1/2 cup milk (you can use regular or almond milk)
  • 1 tsp vanilla extract
  • 1/2 cup washed blueberries

 

Instructions:

1. Sift all the dry ingredients together. (Flour, Salt and Baking powder) 
2. Then pour in milk, egg, melted butter and vanilla and whisk them all together.
3. Now fold in the blueberries (you can also use chopped strawberries).
3. Heat a nonstick pan over medium heat. Pour the batter (about ¼ cup for each pancake) 
Brown on both sides. 
4. Serve with maple syrup (or honey) and fresh fruit.
You can also use this recipe on its own and without adding the blueberries! It will be a simple fluffy pancake recipe.
