Healthy Banana Bread Recipe

Who else loves the smell of freshly baked banana bread?!
This healthy banana bread is made with whole wheat flour and sweetened with honey and dates and is my favorite breakfast! It’s super moist and tasty and is perfect with a cup of coffee in the morning! 

Ingredients:

  • 1½ cup mashed bananas (about 2-3 Ripe bananas)
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • ½ cup milk
  • 10 pitted Deglet Noor dates
  • 13/cup whole wheat flour
  • 1 teaspoon baking soda 
  • ½ teaspoon salt
  • 1 teaspoon cinnamon

Instructions:

1. Preheat the oven to 350 F and line or grease a 9 x 5 inch loaf pan.
2. Now we prepare the dates.
– If you use “Deglet Noor” dates or any kind of dates that are dry, you should first pour some boiling water on them and let them sit for around 20 minutes (while you’re preparing the batter). After 20 minutes, cut them into small pieces.
– If you have “Medjool” dates, they are already soft and there is no need to add water to them before. But, these kind of dates are often sweeter and larger than the deglet noor ones. So, I would add less (around 6-7 instead of 10) but if you like a sweet cake add 10!
3. Mix the dry ingredients (flour, salt, baking soda, cinnamon) together in a bowl and set aside.
4. In a large bowl, mash the bananas and measure them to make sure they’re around 1½ cup.
5. Add eggs and whisk very well.
6. Now add the rest of the wet ingredients: oil, milk, honey and vanilla extract. Mix very well.
7. Add the dry ingredients and with a spatula or a spoon, gently fold them in. Do not over mix.
8. Fold in the dates.

9. Transfer the batter to your pan and bake in the preheated oven for about 40-50 minutes or until a toothpick comes out clean. I always check on it after 35 minutes to make sure that I don’t over-bake it. If the top is getting too brown but the center is not done yet, simply place a piece of aluminum foil on top of the pan and continue baking until it’s done.
