Orange Cardamom Cinnamon Rolls

These super fluffy rolls are packed with orange zest, cardamom and cinnamon, these rolls are the most delicious treat for every occasion!

Ingredients
  

For the rolls:

  • 3½-3¾ cup all purpose flour - 420-450 grams
  • teaspoon instant yeast - 10 grams
  • 1 teaspoon salt
  • ¼ cup granulated sugar - 50 grams
  • ¼ teaspoon ground cardamom
  • ¼ cup yogurt, whole milk - 60 grams
  • 1 cup whole milk - 240 ml
  • 1 large egg - at room temperature, lightly whisked
  • ½ cup unsalted butter, at room temperature - 113 grams or 1 stick
  • ½ tablespoon orange zest
  • ½ teaspoon vanilla extract
  • teaspoon orange extract - optional

For the Filling:

  • 4 tablespoons unsalted butter - at room temperature - 56 grams
  • ½ cup light brown sugar - 100 grams
  • 1 tablespoon ground cinnamon
  • ½ tablespoon orange zest
  • 1 teaspoon cardamom
  • pinch of salt

For the Glaze:

  • 1 cup confectioners sugar - 120 grams
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
  • ¼ teaspoon orange extract - optional

Instructions
 

Make the dough:

  • In a Mixing bowl, whisk together 3½ cup flour, yeast, salt, sugar and cardamom.
  • In a microwave safe bowl, add milk, butter (cut into small pieces) and yogurt. Microwave for 30 seconds, take the bowl out, stir, then microwave for about 30 more seconds or until the butter is almost melted. Take the bowl out, stir until butter is completely melted. The temperature of this mixture should be 110°F (43°C) or warm to the touch. You can use a thermometer to be more accurate.
  • Add the liquid mixture to the dry ingredients, along with the egg, vanilla, orange zest, and orange extract if using. Start mixing the ingredients together with the dough attachment (or with a spoon if you're not using a mixer), until it comes together. The dough will be quite sticky at this point.

  • Transfer the dough to a floured surface, start kneading the dough and add sprinkles of flour as necessary, so that it's not too sticky. But don't add too much flour, we want the final dough to be soft and if it's still a tiny bit sticky that's totally fine (I added about two more tablespoons). Knead the dough for 3-5 minutes or until it's soft and when you gently poke it, it bounces back.
  • Transfer the dough to a lightly greased bowl, cover and place it in a warm place (you can place it in the turned off oven with the light bulb on) until it doubles in size, about 1-1½ hours.

Prepare the Filling:

  • In a small bowl, add in all the filling ingredients and mix until a paste forms.

Assemble:

  • After the dough is doubled in size, transfer it to a lightly floured surface and roll out into a 16x10 inch rectangle.
  • Spread the filling evenly on top.
  • Starting from the 16 inch side, tightly roll the dough up.
  • Using a knife or a string floss, cut the dough into 1-1.5 inch pieces (2.5-4 cm).
  • Transfer the rolls to a lightly greased (You can use softened butter) baking dish. A 9x13 inch baking dish would work perfectly.
  • Cover the rolls and place them in a warm place until they double in size, about 45-60 minutes.

Bake:

  • While the rolls are resting, preheat the oven to 350°F (177°C).
  • Once the rolls have doubled in size, bake them for 25-30 minutes or until lightly browned.

  • Now we prepare the glaze. In a small bowl, whisk powdered sugar, milk, vanilla and orange extract until it's smooth. You can add more milk, half a tablespoon at a time, if you would like a runnier consistency. Drizzle some of the icing over the rolls while they're still warm and use the remaining for individual serving.
