Rhubarb and Strawberry Jam Galette

Did you know how easy it is to make this beautiful galette? All you need is a pie crust, which you can find the recipe for here , a few stalks of rhubarb and a couple tablespoons of strawberry jam, which I made right before making this galette!

 

Ingredients:
 
1 pie crust ( to make the crust, follow the recipe here!)
2 cups Rhubarb, cut in small pieces (about 4-5 stalks)
1/4 cup Sugar 
2 tbsp lemon juice 
Egg wash (beat 1 egg with 2 tbsp of water)
3-4 tablespoons strawberry jam (Pureed)
 
for the strawberry jam
 
2 cups fresh strawberries, cut in halves
3-4 tbsp sugar (add more or less depending on how sweet the strawberries are)
1 tbsp lemon juice
Instructions:
 
1. Start by making the jam so that it has time to cool down.
Combine all the ingredients in a saucepan and cook on medium low heat for about half an hour until they are cooked and tender.
Then remove from the stove and puree in a food processor.
Let it cool down and refrigerate.
2. Mix rhubarb, sugar and lemon juice in a bowl and set aside for about 30 minutes. This is called “Macerating”. It softens the rhubarb and releases its juice, so that when we bake the galette, we won’t end up with a soggy pie crust. (because we already removed the juices from rhubarb! )
3. Preheat the oven to 375 F.
4. Roll out the pie crust on a lightly floured surface.Then place it on a lined baking sheet.

5. Spread about 3-4 tablespoons of the cooled strawberry jam evenly on top. Leave about 2 inch on the edges.

 

6. Add a layer of rhubarb. Avoid adding the rhubarb juice so that your crust won’t end up soggy.
7. Fold the edges.
8. Brush the edges with egg wash and sprinkle some sugar on them.
9. Refrigerate the galette for 15 minutes.
10. Bake for 30-40 minutes in the preheated oven until the edges are golden brown.
You can enjoy this galette with a scoop of vanilla ice cream on top!😋
