No-Churn Coffee Ice Cream

No-Churn Coffee Ice Cream

Ingredients
  

  • 2 cups heavy whipping cream - cold
  • 14 oz can of sweetened condensed milk - 397 grams
  • 4 tbsp instant coffee granules
  • 4 tbsp hot water

Instructions
 

  • Dissolve 4 tablespoons of instant coffee in 4 tablespoons of hot water and set aside to cool down. We are NOT going to add all of this to the ice cream at once. The amount depends on your preference and the brand of coffee you are using. The coffee I used wasn't so strong in flavor so I had to add all of it. But we'll get to that!
  • Whip the heavy cream in a bowl until stiff peaks form.
  • Add in the condensed milk and using a spatula, gently fold it in the whipped cream. Be careful not to over mix.
  • Add half the coffee mixture (2 tablespoons) and gently fold it in. Taste the ice cream to see if you like to have more coffee flavor. If so, go ahead and add more coffee, 1 tablespoon at a time, until you reach the desired flavor.
  • Transfer the mixture into a freezer safe container (I used a loaf pan), cover it with plastic wrap and freeze for 6-8 hours or overnight.

Notes

You can also add ground coffee in addition to the instant coffee for more texture and coffee flavor. Because ground coffee doesn't dissolve in the ice cream like instant coffee so it gives the ice cream a cool look and texture!
