Fudgy Brownies Recipe

These brownies are so rich and delicious, with a chewy center and a shiny crackly top. They are easy to make and so irresistible, they will disappear in no time!

Ingredients
  

  • 5 oz dark chocolate (72%), chopped - 140 grams, divided
  • ½ cup unsalted butter, cut into small pieces - 113 grams or 1 stick
  • 3 tbsp unsweetened cocoa powder - 15 grams
  • ¼ tsp espresso powder - optional
  • 3 large eggs
  • ½ cup granulated sugar - 100 grams
  • ½ cup brown sugar - 100 grams
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup all purpose flour - 60 grams
  • flaky sea salt - optional

Instructions
 

  • Measure and gather all the ingredients.

  • Preheat the oven to 350°F (177°C). Line a 8x8 inch baking pan with parchment paper.
  • In a microwave safe bowl, add butter and 100 grams (3.5 oz) of chopped chocolate. Microwave for 30 seconds, take the bowl out and stir. Keep microwaving for 10 second intervals until butter and chocolate are completely melted.
  • Add in cocoa powder and espresso powder, whisk until combined. Set aside too cool down.
  • In a mixing bowl, add eggs, granulated sugar, brown sugar, vanilla and salt. Using an electric mixer, beat them on medium high for 5 minutes.
  • Add in the melted chocolate mixture and mix for about 30 more seconds until combined.
  • Sift flour into the mixture and fold until just combined.
  • Add in 1.5 oz (40 grams) chopped dark chocolate and fold them in.
  • Transfer the batter to the pan and bake for 23-25 minutes, until it cracks on top. You can take the pan out on 18 minutes mark and tap it on the counter a couple of times for a more crackly top.

  • Let it cool down, then cut into squares and enjoy! You can also sprinkle the tops with some flaky sea salts.
