In a bowl, add in yogurt, ¼ cup honey, vanilla extract, lemon zest and pinch of salt. Mix to combine. Taste and add more honey if desired. For a creamier texture, make sure you use Greek whole milk yogurt. You can also go for the vanilla flavored yogurt and omit the vanilla extract in recipe.
Blend the blueberries with ¼ cup of the yogurt mixture and 1 tablespoon of honey in a blender until smooth.
If you want the popsicles to have an even blue color, mix yogurt and blueberry mixture completely. If you like a marbled look, leave them separated.
For each popsicle, add about 1 tablespoon of yogurt mixture into the mold, followed by 1-2 tablespoons of blueberry mix. Keep adding layers of yogurt and blueberry until the mold is ¾ way full. Use a knife or a wooden skewer to gently mix them in the mold. This will create the marble effect.
Add in the sticks, and freeze for 4-6 hours.
Run popsicle mold under warm water and remove them from the mold. You can also drizzle some melted chocolate on top. Enjoy!
