Blueberry Yogurt Popsicles

These blueberry yogurt popsicles are refreshing, healthy and so fun to make. They are sweetened with honey and flavored with vanilla and lemon zest. You can also drizzle the tops with some dark chocolate, because who doesn’t like chocolate?!

The great thing about this recipe is that you can customize it with your favorite flavors and berries. You can sprinkle the top with nuts, biscuits and sprinkles for a fun touch.

Make sure you use Greek yogurt for a creamy texture. I also like to leave them out for about 5 minutes so that they are softer and more “ice cream” like!

Blueberry Yogurt Popsicles with Honey and Lemon Zest

Prep Time 10 minutes

Equipment

  • Popsicle Mold

Ingredients
  

  • cup fresh blueberries
  • 1 tbsp honey
  • cup Greek whole milk yogurt
  • ¼ cup honey
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 tsp lemon zest
  • ¼ cup melted dark chocolate chips - for decoration

Instructions
 

  • In a bowl, add in yogurt, ¼ cup honey, vanilla extract, lemon zest and pinch of salt. Mix to combine. Taste and add more honey if desired. For a creamier texture, make sure you use Greek whole milk yogurt. You can also go for the vanilla flavored yogurt and omit the vanilla extract in recipe.
  • Blend the blueberries with ¼ cup of the yogurt mixture and 1 tablespoon of honey in a blender until smooth.
  • If you want the popsicles to have an even blue color, mix yogurt and blueberry mixture completely. If you like a marbled look, leave them separated.
  • For each popsicle, add about 1 tablespoon of yogurt mixture into the mold, followed by 1-2 tablespoons of blueberry mix. Keep adding layers of yogurt and blueberry until the mold is ¾ way full. Use a knife or a wooden skewer to gently mix them in the mold. This will create the marble effect.
  • Add in the sticks, and freeze for 4-6 hours.
  • Run popsicle mold under warm water and remove them from the mold. You can also drizzle some melted chocolate on top. Enjoy!
