The great thing about this recipe is that you can customize it with your favorite flavors and berries. You can sprinkle the top with nuts, biscuits and sprinkles for a fun touch.
Make sure you use Greek yogurt for a creamy texture. I also like to leave them out for about 5 minutes so that they are softer and more “ice cream” like!

Blueberry Yogurt Popsicles with Honey and Lemon Zest
Equipment
- Popsicle Mold
Ingredients
- 1½ cup fresh blueberries
- 1 tbsp honey
- 1½ cup Greek whole milk yogurt
- ¼ cup honey
- 1 tsp vanilla extract
- pinch of salt
- 1 tsp lemon zest
- ¼ cup melted dark chocolate chips - for decoration
Instructions
- Blend the blueberries with ¼ cup of the yogurt mixture and 1 tablespoon of honey in a blender until smooth.
- If you want the popsicles to have an even blue color, mix yogurt and blueberry mixture completely. If you like a marbled look, leave them separated.
- For each popsicle, add about 1 tablespoon of yogurt mixture into the mold, followed by 1-2 tablespoons of blueberry mix. Keep adding layers of yogurt and blueberry until the mold is ¾ way full. Use a knife or a wooden skewer to gently mix them in the mold. This will create the marble effect.
- Add in the sticks, and freeze for 4-6 hours.
- Run popsicle mold under warm water and remove them from the mold. You can also drizzle some melted chocolate on top. Enjoy!
