  • cups heavy whipping cream
  • 2 tbsp honey
  • 1 tbsp confectioners sugar
  • 1 tsp vanilla extract
  • Pistachio and rose petals - for decoration

Instructions

  • Let the puff pastry thaw on the counter for about 30-40 minutes. It should still be cold but you should be able to unfold without breaking it.
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Divide the dough into 9 squares (3 by 3 inches) with a pizza or pastry cutter. You can also use a sharp knife. Place the squares on the lined baking sheet.

  • Cover the squares with another piece of parchment paper and then place a smaller baking sheet on top. This helps the pastries rise evenly and less dramatically.
Place the squares on the lined baking sheet.
  • Bake in the preheated oven for about 20-25 minutes or until golden brown. You can remove the top baking sheet and parchment paper for the last 5 minutes.

  • Let them cool down completely. Then use a serrated knife to cut each square into two layers.

  • Whip the heavy cream, confectioners sugar, honey and vanilla extract on high until stiff peaks form. You can taste the whipped cream and add more honey or confectioners sugar if desired.
  • Each napoleon is made out of 3 layers of puff pastry. Pipe 9 dollops of whipped cream on the first layer, then repeat the piping for the 2nd and 3rd layer. Top each pastry with ground pistachio and rose petals.
